I see lots of blue cheese at the market that is green and not blue.  The dates always have a few months on them left before they expire.  What does it mean if it is green mold and not blue?

Thanks

Probably just has to do with the variety of P. Roqueforti they used. Different varieties of PR will be different colors, ranging from blue to green.

Especially wild strains of PR can have a greenish tint. When your bread gets mouldy it's likely to be one of the culprits.
