Hi, I brew my own beer, my own bread, make my own wine and cider and mead and have just started making cheese - In the last few weeks I have made some paneer and some ricotta, and an un-aged cheese ripened with kefir grains. Not had any success, yet, with mozzarella but when I have made some feta , asiago,  blue cheese (and a good batch or two of mozzarella) I know I will have begun to think of myself as someone who can make cheese. Truth be told, making cheese is a great deal more challenging than brewing beer.

No kidding!  But, that is what makes cheesemaking fun.  Welcome to the forum.

Thank you for your welcome. I am trying to navigate around this forum and one thing I don't see is "tried and trusted" recipes and protocols. Is this something not viewable by "guests" or is this something the moderators of this forum decided not to create as a specific forum. By "tried and trusted", I guess I mean recipes and processes that have won awards and recognition as exemplars of the types of cheese they represent...
