Is this cheese safe?

I bought some Taleggio cheese (DOP), but the rind has a greenish gray mold.  I don't remember that from the previous Taleggio cheese and am wondering if it's safe to eat?



The color is slightly deeper than the photo shows.

I'd eat it but be prepared to remove the rind if it tastes funny.

Thanks Andrew.  So do you mean you'd actually even continue to eat the rind and as long as it doesn't taste bad/funny?

Welcome to the forum, John.

You can see a similar gray-green mold in the commercial example shown here. Not a problem.

John, Have you opened the cheese? Is it similar to brie? Have you pictures, to tempt us with.

Washed rinds, like Taleggio have pinkish, orangish, or reddish rinds, and can have a granular texture from residual salt crystals left behind from brine washing. They can taste bitter, but it depends on the cheese, so take a bite and see if it positively effects your experience.
