First Raclette Cheese

We made a raclette cheese last year and cracked it open today.  Pictures are for the Raclette at 7 weeks and at 4 months when we cracked it open.  It had dried out a bit in the cheese fridge as we made half the amount in the recipe from Gavin Webber's website.  As it was half the normal size, it dried out much more quickly.  Anyway, we melted the cheese over vegetables and potatoes and it tasted similar to Raclette.
