Danisco's Choozit Brand Freeze Dried Meso & Thermophilic Cultures - Amount To Use?

Hi,
I am a newby cheesemaker, making cheeses with 100 litres of milk. We have bought some choozit cultures (RA 21 LYO 50 DCU and TA 62 LYO 50 DCU.)
There are no instructions on the packet ! so how much do I use ? I can't find this information anywhere.
Any help is most appreciated.

In general if used alone
For the  TA 62 about 3/4 teaspoon per 100 liters.
for the RA 21 about 1.5 teaspoons

BUT that is an estimate for single culture use. You may use multiple cultures for some cheeses and use more of one culture than the other. You may also use more or less depending on the type of cheese. Not a big help huh?

It would bebest to ask the distributor you got the culture from as they are all slightly different.
