I am helping with a 100 goat cooperative and starting to make cheese.

Does anyone have any information related to goat's milk cheese processing?

I assume you mean for cheese making, are you asking for recipes or suggestions on what cheese to make?

This booklet has some more african than Arabic type cheeses, who is your customer for the cheese, I suggest make what they like/want?
