Anyone experienced with a Wheeler Cheese Press?

Hello,

I've inherited a wheeler cheese press and I have a question about the springs that came with it.  There are two sets.  One set seems stiffer than the other set.  When pressing the cheese, I'm not sure which set of springs to use and I'm guessing that which set I use matters when it comes to pressing at the proper psi.  The "gauge" is the little metal plate that hangs down and has increments from 0-50.  My assumption is that by using the lighter springs, that the psi is true to the gauge (meaning if I set it at 20 lbs, I'm getting 20 lbs.) and if I use the stiffer springs I'm getting double the amount?  Anyhow, any recipe I've made only calls for up to 50 lbs. so far so I am not worried about getting to a heavier weight, but I am concerned about getting to the proper weight in the 0-50 lb. range. 

Does anyone else have this cheese press and the two sets of springs AND know the difference?

Sorry,  I don't.  I Googled around to try to find the manufacturer, but no luck there either.  Perhaps you can contact a vendor and ask them, if nobody else on the forum can answer your question.

Best thing to do is use a scale and measure the weight with each set of springs under various tensions. Then you can have a better idea of what pressure you are actually producing. That is the challenge with spring presses; hard to now what is happening. Good luck. :)
