Mixing cheese and salami

Hello all,

I have now successfully made cheese and salami and I am wondering if any of you ever tried to include pieces of cheese in your salami.

I recall with great fondness those roquefort or laguiole salamis that I would buy on the market and I would love to be able to replicate them. However, I am quite unsure on how to proceed.

I would love to hear your thoughts!
