Colby Cheese Making Recipe - CFO Wiki

I sent a previous email asking about the colby cheese recipe errors. in the list of ingredients it says 1.6 gm and 15 gm of salt to be added at different times, but in the direction it says to ad 15gm with the rennet and then later to sprinkle the curds with 15 gm of salt. which is which? i'm at the curd stage now, i hope i haven't ruined my first batch of cheese.

Well, it's probably too late to have an effect, as you would have needed an answer more than twelve hours ago to change anything, but I would have just gone ahead and salted the curd with the 15 gm of salt.

Honestly, I've never seen a recipe where salt was added with the rennet.  I've never used the recipe in the wiki.

I doubt your cheese will be ruined.  What did you decide to do?
