Calling all IRISH cheesemakers please....

Hi all,

I am writing to you from Australia.

I will be in Dublin in 3rd week of June to visit my son for his 21st birthday and while I am there, I would dearly love to learn a little more about Irish cheese making.

Does anyone have a dairy or contacts where I might go and spend a day watching cheese being made or at least taste some cheese and learn about the processes specific to Irish cheese?

Any advice or contacts would be gratefully accepted.
