Opened one of my hispanicos with saffron from january. As with most of my other cheeses it had been vacuum packed. Not sure if that's why it had a bit of an off taste. Well I'll let it air for a day or two and then we'll see...

I think the "off taste" stems from the saffron. I experienced an off-putting character to my Saffron-Infused Hispanico (https://cheeseforum.org/forum/index.php/topic,11730.msg95835.html#msg95835).
I think saffron works well in company with other components in cooking, but when isolated in a cheese...it overpowers.
Other cheeses have been made and consumed, but this Hispanico may still be lurking in my fridge...somewhere. :o

I think that you are right. It must be the saffron overpowering...
