What sorts of cows do they use, largely? It doesn't seem to be Brown Swiss, or at least not all...?

Just an update,

I am now in Switzerland, but I have not yet done anything with cheese other than buying some gruyere and Appenzeller at the local Coop. (In case you didn't know, the gruyere you can buy in the US is not really that good)

Soon I will be in the mountains.
