The acid got away on me for this pepperjack

Thank you for that thread qdog. I had already contacted the company's technical support and was told it is probably defective, apparently a lot of people have been having the same issue recently, they told me call the company I bought it from to have it exchanged. Long story short UPS is picking mine up and I am getting another one. If this is still a problem I may have to go searching for where to get some of those chemicals as I have only used them in school before and have never needed them at home for anything. I don't imagine it will be too hard to find, but hopefully the replacement works well right away.

Sorry I am a bit tardy in posting the cheese porn, I cut into this cheese about a month and a half ago now, but I have been incredibly preoccupied between work and school.  I just started at the UW-Milwaukee. Everyone loves this one. For only having aged it out 2 months, in a vacuum bag at that, I am amazed at how much flavor there is.  It is a mild and smooth when it hits the tongue.  Then it has a real creamy taste with a mild pepper finish.  Everyone loves it but I personally would have liked a bit more kick.  Next time I think I will try to double the red pepper flakes.  As you can see in the picture the bell pepper did not add much in the way of colors, or flavor, so I think I will double that as well.  The way this cheese melts is also really pleasing.

Looking at the picture and realizing you may not easily notice there are some nice runny egg under that cheese.

First before phoning Extech you should try resetting the meter , if you have not already done so .

I had the same problems with the first probe tip ,the second one worked much better . For sure the tip gets clogged very easily with milk fats and proteins .

I would suggest that if you can still return the Extech and can afford a little extra this new meter from Hanna is the same probe as the 400 dollar meter  but using the iPad / tablet instead of a read out box

I had forgotten about the meter honestly, they actually sent me a replacement which I've barely used yet, but wow that is one cool meter Gregore. AC4U for pointing it out, I may eventually pick one up, unfortunately money is a bit tight right now.
