I have had dairy goats for four years now, so it is time I get serious about my cheese making.  My goal is to perfect this skill while using old fashioned methods to make interesting cheese.  I have made cheese with store bought powdered starter cultures and to be honest that did not appeal to me.  So after some research I have decided to get some kefir going and start using that for my cultures.  I am totally amazed at the different cheeses you can make with kefir, rennet and different temps.  So excited to join this forum and learn from all you experienced cheese makers!

Thank you!  I have been playing around with making cheese in the past, my cheddar failed, actually it would have been good but I didn't get it sealed good enough and it got pretty moldy, but the taste was starting to get fantastic!  So I have a better cheese press coming which I think will help me get it compressed better making it easier to get it sealed, or I may figure out a way to age it that does not use sealing, maybe brine it or salting, I am just learning all the many ways and I can't tell you how eager I am to get going!   Keeping my goats in milk this fall just so I can make cheese.
