Did a 7 Pound Emmental

Great cheese. I hope that one day I will be able to make this too.

Coming back to the fat content, there is one thing I don't quite get. Alp stated that Swiss Emmental is made with partly skimmed milk, but it has a fat content of 45% which classifies it as a full fat cheese. Also the official Swiss Cheese website states it is full fat: http://www.schweizerkaese.ch/kaesesortiment/emmentaler-aop.html

I have to admit that I am confused.
