My 1st Double Gloucester (while sneaking in the back door)

I made this cheese back in early August but didn't post pictures (sorry :().  It was my first DG and if my memory is correct it all went well but I didn't get as good a press as I wanted, thus some cracks.  Cut it for Thanksgiving and it was not that great so I vac bagged it and put it in the cave until last night.  It is wonderful!  I haven't had great success with cheddared cheeses (i.e. getting the hat-trick of texture, taste and tang) but this one is worth celebrating :)

Thanks.  I've not been making cheese these last months (many other personal things have taken front and center) but I thought this one would would be worthy of posting to get back in the swing of things.  I have a lot of catching up to do on the forum.  The wife and I watched "The Martian" a few days ago and I feel like Matt Damon being separated by about 100 sols from you guys :(
