I just found this forum while trying to find more info on Dubliner Cheese. Didn't know if it was worth trying. I'm exclusively a yogurt and cheese consumer and not maker at this point but I hope to learn what's good to eat by how it's made. This seems to be the place for learning more about such things. Welcome Johnathan.  You may have a bit of a problem with regards to Dubliner.  It's a new cheese and the recipe is proprietary and a secret.  Been quite a few on here that have tried to make it, including me, so search the forum and see what you can come up with.
