I loved the Taleggio I did but the wife nearly drove me into bankruptcy buying air freshener. LOL  I'm tempted to do a batch of b linen cheeses though and this just makes me want to that much more.

I love the smell of B. linens in the morning. Smells like victory the promise of tastebuds heaven.  :D

Actually, to be quite honest, my olfactory senses have taken a hit over the past several years and I have to seek confirmation from my wife whether something is in the malodorous sector. Or, just maybe...my cheeses don't stink. ;)

Nice looking! I am sceptical to stinky cheese, tried one (storebought, massproduced) recently but it was very...stinky... ::) Anyways, a cheese for your cheese!

Gee, I waited all week to sample this cheese again. I'm growing very fond of this cheese! :-* :P

Seems like the rind in this make actually shows some linens color along with the Geo white...nice. The center does seem to be softening still more trying to catch up to the rind ooziness. It has that sticky, almost taffy-like paste that I have seen in commercial Italian-made Taleggios. I may be on to something here. 8)
