I have been making cheese for about 3 years and have tried my hand at a variety of cheeses using store bought milk  but in the last year we have acquired a dairy goat. She produces almost a gallon of milk a day which means I make a batch of cheese daily or every two days when time allows.

We are 100% off grid so I have to be inventive when it comes to all farm based activities. I would love peoples suggestions for a cheese cave that requires zero electricity.

Welcome to the forum!  Going off grid does require some extra effort as you well know.  The best way to have a cheese cave is to have a real cave in the ground.  There are some companies that sell small structures designed to be buried using a backhoe.  I am not sure of your medium temperature, but it may be possible to use a well insulated basement or room?

If you do not have a basement then a septic tank is probably the cheapest way to get a concrete cave in the ground that you know is safe . Have it buried into the side of a hill and build a door . Or dig it down a little and cover the rest with at least 5 feet of dirt .

I thought about putting one under my drive way when we redo it.

I agree with the suggestions above. I'm sure it doesn't need to be said that you would not want to actually hook up the septic tank to the septic system .... :)
