Buttermilk Blue

I decided to trier today and decided it was ready to cut at 10 weeks.  It looks nothing like any other blue I have tried.  Instead of veins it has some wicked looking blue patterns.  The paste is a bit blotchy in color maybe due to some B. Linens getting in on the second piercing.  However it tastes really nice!  The blue flavor is actually somewhat mild probably due to the higher butterfat content.  The buttermilk has provide a slight sour note that works very well with the level of blue and salt.  It has a very creamy texture that is almost spreadable at warm room temperature.  All-in-all I would make this again.
