Stainless steel vs. plastic

I know that to start I have to make sure that everything has to be SS or wood.  Before and after the curds are made, Can I use plastic utensils( skimmer, colonder, spoons  etc. )

I can't see why not. Whatever the material, it should be sterlised before use.
