Writing on cheese

Hi

Can anyone tell me what people use to write the date or info number on the cheese, I assume its some kind of edible ink pen..?

Some use or make plastic letters that are put on the cheese for the last pressing (leaves indented letters in the cheese when done) some use casein labels (search the forum for those)

If I wax a cheese I take a small note and put it between wax layers.  You can read it through a layer of wax pretty easy.

There is such a thing as edible ink, I found on amazon but not specifically for making cheese.
I write on paper then wax it under a layer of wax when I seal it.
I vacuum pack and write with permanent marker on the sealed area.
I keep a log of cheeses, the recipes, the age it may be done, and all my cheeses have names that reference them to the log book.

Curdlessness

I only make one kind at a time, and either eat it all or chuck it before it gets too disgusting. I don't have to keep track of what's what, as I only have the one to worry about!  ::)
