First Cheddar

This is my first try on British cheeses, so I mostly have no idea of what I am doing  ::) and decided to follow a recipe from cheesemaking.com

I used 10 litres of raw milk from a farm 1 km away from my house. I did not add any additional culture. I did not have annatto so I boiled some achiote seeds, it does not seem like I added enough  :-[

I do not think I could have add any more milk  ;D



Well, let's go straight to the cheddaring part



Added the salt in three stages as the recipe says



First stage of pressing

Third



Fourth, it seems to be well knitted



This is the responsible for that, in my backyard



I decided to go fully traditional and wrapped in cloth with lard



Ugly as hell, but then you press it again and gets better  ^-^



Now it is in the cheese cave, it will be a long time there  :'(

A cheese for you!  Looks great!  I'm drooling over your brewing setup too.  Making beer is illegal in Japan  :'(  It's only an infraction of the tax law, so most people don't care.  However, breaking tax law is specifically stated as a reason for not granting permanent residence status and later citizenship here and since I want to live here forever, I can't risk it...  Some day...

I did not know that of Japan, it would be risky then  :( My brewing setup is a 3-vessel HERMS, simple but effective, and as you can see, you can use it as a table for the press  O0 Here in Spain brewing is something perfectly legal as long as you only brew for yourself and do not intend to sell it

Ha ha!  HERMS is hardly simple (at least to build)!  I was always doing triple decoction brewing because I like my hobbies to take all day :D  I have been surprised at how much I am enjoying cheese making (which I decided to do as a replacement for beer brewing).  The make is super interesting, but the affinage (ageing) has no real comparison in brewing.  I'm still doing baby steps, but so far it's been super fun.  It's also really fun to see what others are doing, so thanks for posting all the great pics!

Always triple decoction? I made it twice (for Czech lagers) and found it was like a pain in the a**  ;D I hope you can get citizenship soon, there are never enough triple decoction brewers in this world!

Thank you! I was not really sure of what I was doing , so it must have been newbies' luck  ^-^
