It looks to me as though it cracked due to drying out too much / too quickly. How was the humidity in your cave?

My cave is almost always in the 82-84% range...plus the crack was completely internal, the rind wasn't cracked anywhere, so I don't think dryness was the reason necessarily

Internal vs. in the rind - missed that in the pictures. But mold generally has to have access to oxygen, so presumably there was some sort of path through the rind ...
