Just wanted to introduce myself.    Our family has a small ~50 milking cow dairy outside of Pittsburgh Pa.     We opened our custom designed creamery in April (yep, in the middle of all of that).    We currently have one 2000lb vat and a 3000lb on the way.   We have separate packaging and aging rooms and all of the shiny stainless goodies that we could want.

Our operation is up and running with Curds, Quark, Colby, Cheddar, Feta, and Gouda...    about 80% of our available make cycles goto Curds and Quark. 

Looking forward to learning and meeting.   

We are also looking to hire a junior cheesemaker to run the plant/lab a certain number of days a week.
