Had a few friends over last night, now that we've all been vaccinated and can finally start socializing in small groups again!

Of course, I had to pull out some cheeses that are ready. My wife baked up some seeded crackers and I raided my cheese cave of the following:

1.   St. Michael (a triple cream)
2.   Six month old Gouda
3.   Herb encrusted Brin D'Amour ( we actually had three versions: Aleppo Pepper; Za'ata; dried basil)

Huge success with all the cheese and crackers!

Cheesemaking has rekindled our love of spending time together, Diane and me!

Got my second vaccine last week. Yay!  My husband and son get theirs this week.  Can't wait to have enough (good) cheeses to have a wine and cheese gathering!
Making cheese is easy, making a cheese is hard

Hope Japan can get some vaccine soon :-(

Sorry to hear that, Mike. I miss being in the US, vaccine shortages here (India) too.  I got my first shot in the beginning of April and then when I went for my second appointment they had no vaccine, it may be July before enough arrives to start vaccination up again. We are mostly shut down here, my cheese culture order from NEC is stuck decaying in Indian customs as well :(

I feel for anyone in India right now. The news reports that we see here are simply heartbreaking.
