Gonna make 3 batches in 5 days between Christmas and New Years.  Wife is going out of town and i have nothing to do...

72 gallons total.  Woohoo!.  She greenlighted the whole thing..  I cannot wait......

Wayne....
When taking part in a marathon it is important to take in plenty of fluids.
Might I suggest breaking open a few bottles of your '07 vintage during this endeavor?
As always I'm just looking out for your health and well being.

I don't have to.  I really don't. 

But one of the reasons i don't make cheese more often, is that my wife reminds me that I do, in fact, have chores. And I have to say that I do feel just a tad guilty playing with cheesemaking while I hear the vacuum going upstairs.

She is going to her folks house, out of state, for 5 days.  That leaves me to do what I please.  guilt-free.

So I'm making cheese !


And in the grand scheme of things, given my history, my wife is good with cheesemaking.

Good thing you didn't have a wreck on the way home or the road would have had a milk bath!  Looking forward to pictures of your further steps.
