Gnozzi a la Romana

We are spoiled in this country many people don't cook their own food anymore - it comes from a box or a plastic bag so some staples like semolina are harder to find. It also depends on what part of the country you are in. I come from a section of the country where many Italians imigrated including my grandparents. I make a lot of pasta so I am always buying semolina flour. I makes a firmer better tasting egg noodle.

Pavel, I made this for breakfast today and everyone loved it. I fried it on a griddle instead of baking and I used my own cheese:cheddar ( I gotta do something with all this cheese!) It was wonderful. I had to add a little more flour than the recipe called for probably because I did not use seminola. Thanks again.

You are welcome, Farmer :) And you were closer to an original recipe with frying it. I still like Gnozzi and next time I shall have it for supper to eat at the same time as you do ;D

The dish you are making is a traditional italian dish called Gnocchi alla romana.

It's normally left to set in a big slab, then cut into circles.  These are then placed in a dish in overlapping layers, covered in grated cheese and knobs of butter and baked in the oven...yum!
