My Sausage Weekend!

We are also quite the smelting pot here in the US. I grew up in an Italian area (all relatives of my Mom) with a smattering of Polish but they don't do that much these days. People go where they can. I like just about anything as long as it doesn't look me in the eye while I'm eatting it, get used in the reproduction process, taste me back while I'm eatting it or boiled okra other than that I am good to go!

Well I'm a little bit more discerning than that.  lol    I have to admit that I got a bit of a shock when I find heard about Prairie oysters.  Oh my... yuk.

Yeah I can't bring myself to eat that sort of thing. Heck I can't even stand sausage casings I peel mine before eatting them. LOL

That sausage-stuffed sausage thing it a brilliant idea. Seriously, I *NEED* to have sausage after looking at these now. Craving is on; so on!

Last week was quite a charcuterie weekend for me too; Local organic tenderloins are now dry-curing in my new cheese/wine/meat chiller in anticipation of becoming Prosciutto-style saucissions. Posted it here too with lots of photos: https://cheeseforum.org/forum/index.php/topic,2834.0.html
