Blue Cheese - No Blue Veining!

Hello, I have followed the recipes for both the New England Cheesemaking Blue Cheese and Peter Dixons blue, neither of which have sucessfully developed blue veining in the paste.......I needled at the right times and there is blue growth on the outside of the cheese, am I forgetting something?
My latest attempt left me with more white mold and very little blue on the rind but none inside again, I did not use candidum......HELP!

Hi Jane, welcome to the forum!

So that's strange, few questions:
1) How blue was the rind when you pierced?
2) Did your pierced holes close as cheese was too moist?
3) When you cut open the cheese, were then any freedoms or gaps inside the pate in which the blue could grow or just the needle holes?
4) How high is your humidity when piercing and after, do you have a meter or if going by feel was there none/some/lots of condensation inside the ripening box?
5) I don't understand your latest batch having lots of white mold and minimal blue even without using P candidum, I've always gotten dramatic blue mold growth, what is the source of your P rocqueforti I've just used some ground up store bought blue cheese and worked great.
Some pictures would help.

Also, there are quite a few threads in the blue mold board that if you can explore may give you some other ideas, John.

to answer your questions, the first batch, which did have blue mold on the outside- Peirced it at about 7 days when there was a good amount of blue showing up, it was pretty dry so I dont think they closed up. And there are spaces inside the paste.  I have noticed that there is quite a bit of condensation in my ripening box....Im thinking its probably too high. I dont have many other choices for ripening it, since I only have one fridge right now, so any suggestions for bringing the humidity down in the box would be great!

I have pen. roq. from glengarry and it is the same kind I used in the last 2 batches, which turned blue on the outside, so I have no idea why the last one I made is white....
