Making Cheddar!

I get milk fresh from the dairy,  in 5gallon bags.  They are earlier in the post.

Wayne, what recipe are you using?  You are right in that I never got the curd small enough and that they never melded together.  But that was what my recipe instructed.
Your curd has a completely different look to what mine ended up being.

It is a "stirred curd"  not a traditional cheddar. 

I used to make the traditional cheddar when i make more,  but i'm not sure i make enough cheese at any one time to get a good "slab" of cheddar.  So..  I went with a stirred curd that never allows a slab to form. 
thus,  I am not milling my curds either.
