What an excellent source of information and camaraderie!  I am very happy to have found this forum.  I look forward to exploring the bountiful resources and contributing my own thoughts and ideas.

What really caught my attention was the tossing around of numbers and theories surrounding cheese presses!  I am always looking for a reason to start a new project/obsession, and both my wife and my parents are wanting to start making cheese... Voila!!  Instant excuse to begin throwing hours and dollars into a 'new' and 'better' machine!  I'm sure some of you are familiar with the feeling, or at least understand what I mean.  I need to pay a visit to both my local blacksmith and the hardware store to try out a couple ideas.

And a little about me:  Early 20's, strong math background in college (never graduated), planning on returning to college this Fall for a degree in Sustainable Energy & Development or something similar.  I would like to study Jeavons' method of biointensive growing, and then incorporate the energy and building aspects of my education with the efficient farming/gardening principles into one business.  Could go a couple ways with that, just depends on what the main needs of my local economy and townsfolk are in a couple years.  My wife and I live just a few miles north of Mt. Mitchell in Western North Carolina, and are certainly here to stay.  This area is home to the most natural beauty of any area I have ever been to.  Hope to get to know a few of you on here, and maybe meet a cheeser in my area.

Welcome TDFbound, nice intro, there are several threads in psi for presses, also a thread with links to several pictures on web of antique presses including triple action ones for very high psi Cheddars. Many cheeses like like Gouda are only lightly pressed and many cheeses are not pressed at all.

Welcome TDF NC is a beautiful place if you stay way from the big cities. ALmost moved to Ashville about 20 years ago - sure glad I didn't now!

Welcome to the forum! I'm just down the road in Brevard. Plenty of cheesemakers around these parts, it seems.
