has anyone had experience using junket rennet ????
dose it work if so how well, i read that 4-5 times is required  ??? ???

Cheese Head

brent, nope no experience with Junket brand rennet.

But a New York US based Junket Webstore has some recently posted (I don't remember them being 6 months ago) Cheese Making Recipes using their tablets.

Also, there was some discussion on tablet style rennet here.

Good luck.

brent

ok ,the junket rennet is branded "renco" here in a green box and is a liquid i think  ???

Cheese Head

No problems, just google it, legit product, box should have a recommended dosage, which you can vary up/down as required.

Just for other Kiwi's, which store did you find it at?

I used to always use rennet tabs, but I have found the liquid rennet to be much more reliable, and gives a better set.
Just my experiences.

recived the following today from renco (rennet makers in nz)

Hi Brent
Renco for junket will be suitable for hard cheese. This product should be available at any Woolworths, Countdown or Foodtown supermarkets plus any Moore Wilson stores and Wellington City New World, Miramar New World, Island Bay New World and the Pak N Save Petone, it can also be purchased from the Woolworths and Foodtown on line shopping sites.
We do sell it direct from our factory in Eltham in a I litre bottle, if you need this quantity just send a cheque for $22.50 (this includes GST and delivery) to Renco New Zealand, P O Box 122, Eltham together with your postal address and we will post out your order.
Kind regards

Thanks Brent, darn, things sure are cheap in NZ!

NZ$22.50 ~= USD13.18 for just under a US quart, delivered! It's about USD25 plus delivery a 1/2 quart at this major supplier. That makes yours ~1/4 of our cost.

Then again 1 liter or quart would last you a lifetime ;D!

brent

would allmost be worth you importing direct from renco at that price  ;) ;)

I've just added them to the Cheese Making Supplies Webpage and also noticed that they manufacture Lipase as well as Rennet, so anyone ordering from them could order both.
