Hello

I have been smoking meats for sometime and figured its time to try cheese.

I have ordered everything to make a cave, press and all the ingredients to make cheese, I am planning to start with farmhouse Cheddar.

Looks like there are a number of great members here with lots of knowledge , which is good because I am sure I will ask a lot of questions.

Howdy Mike, I grew up in N Vancouver but live in Houston now and have never made cheddar, welcome!

If you Search and can't find it then ask away, some of us will help and also link you to some existing info as some is often hard to find.

What's the story behind the visible user name mikeradio? (Info for others, you can change your visible name from your login name via your profile, How To info in the FAQ's Board).

I own and run a two-way radio communication store, when I would sign up for things the user name Mike is always taken so I created Mikeradio.  My background is in electronics so I enjoy projects like building a controlled cave.  I built a large custom smoker PID controlled in my garage, I am going to turn our old second fridge (fridge only no freezer) into a cheese and meat curning cave.

Aah, understand now, thanks, this forum is not that big, I just checked and Mike or Mike Radio or Radio Mike are not taken.

I have no clue on electrical PID controllers for cheese caves or other stuff but I believe there are a few posts on them here somewhere. For me I just use this temperature controller for my "cheese cave" fridge.
