Hi from a french lost in Québec

Hi all,

well, I'm a french guy that immigratted in Canada 3 years ago.
I'm a homebrewer, vinemaker and I'm missing a lot the vast varieties of cheese we had there.
I do not have the chance to go back very often, and prices of cheese here are quite a steal.
Even if there is good cheese here, it's not the same.

I got a friend who can provide me raw milk from his family farm, good point.

I' getting informations and started to make a shopping list !

First will be brie for wife, and camembert for me, but cantal, blue cheese and goat cheese will be next ;)

Welcome to the site!  I, too, am new at making cheese, have my first blue cheese draining right now.  So far, I've made camembert, goat and cow milk cheddar, mascarpone, mozzarella, coulummiers, feta, ricotta, and chevre.  It's quite an adventure! 8)
