Just stopped reading long enough to say hello.  The wealth of information assembled on this site is amazing.  I have found the answers to more stupid questions after a day of reading than I could think of to ask in a month. My wife and I have done basic mozzarella with good results as well the basics: yogurt,cream cheese,cottage cheese, ricotta.  As well we have what resembles a farmhouse cheddar aging now. We have had a milk cow for years and always hated the thought of discarding the excess milk when even the cats,dogs and chickens have had their fill, we never thought cheesemaking could be so simple. 
We do our own livestock, butchering,sausagemaking,curing,,canning,pickling,freezing storing etc and this just seems to fit in with our style. We are not naturalists or treehuggers {no offence to those who are} we just really enjoy good food that is no longer available at the supermarkets. I recon after another month or so of reading you will hear from us again with some questions not answered  if I dig deep enough.

Sounds like you are well onto the learning curve of making cheese, sadly it endless ;D! Search tool is helpful, there's a How To optimize it in the FAQ Board, also don't forget the Website Articles.
