Freezing Soft Cheeses?

2011 will be the year of cheese for me, and so far I've successfully made 2 lbs. of cream cheese and have a batch of Neufchâtel in the making.

My question is about soft cheeses.

Can I freeze them?

Butter freezes just fine, but what about soft cheese?

I freeze cream cheese, mascarpone, and American Neufchatel, but only use them for cooking after they have been frozen, as they can be a bit grainy when thawed.  Only thaw in the refrigerator and make sure to drain off the excess fluid that weeps out during the thawing process.

I tried that, but didn't find a suitable response.

The results are quite hard to read, so maybe I missed it.

I freezer mozzarella all the time. Not much else though.
