Looking for 8" full size steamer pan for chafer- any suggestions?

I've decided to go with an electric chafing dish for heating milk, and am looking for an 8" pan. 6" seems to be the deepest that is commonly available, and I was hoping someone has come across a link for a deeper pan and wouldn't mind sharing.

The only drawback I'm finding to these, is that there's no lid. So when I have to heat the milk to higher temperatures skin forms on top very quickly.
Kinda like Yuba Bean curd, but from milk.  :) ;D ???

Wondering ... How many gallon batch can be made in one of these pans?  thanks

I've not found local restaurant supply stores here to carry 8" stainless pans. Plastic yes, but not stainless. Polarware is the only company I know of that makes 8" deep pans. Webstaurantstore.com does not stock 8" stainless pans, but perhaps could special order one.

Vollrath also does this stuff; we used them.  Trying to dig up my old sources for our restaurant buildout and equip, but the spreadsheet was on an old computer, and otherwise in archived files.  Will keep looking.

They are 27.5 qts when filled completely to the top, so realistically, about a 7 gallon batch.

Seven gallons would make a 6 to 7 pound Tomme. A nice size wheel !

If I remember correctly the older Hot Dog Carts had a Stainless pan about this size / heated with a Colman white gas two burner camp style stove set directly under the pan.

Anyone for Push Cart  cheese making?
