We enjoyed Wisconsin string cheese fresh from the cheese factories when we lived in Wisconsin.  We have been in Ohio now for 29 yrs and the string cheese available at markets here can't compare to the fresh we used to buy from the family factories.  Today my mozz became my first string cheese!   :D  I watched a couple of videos on youtube about how to stretch it (the video was actually about Armenian String Cheese) and I did the same, letting it stretch by it's own weight to a long rope (like a jump rope) and then twisting it by swinging it in circle so that it twisted upon itself and ended up looking kind of like a braid.  Here is a video if you would like to see it done by the "experts"....

Now if I can get a smoker, and try making that wonderful smoked string cheese!!!!

I like string cheese, too, as it makes such a handy snack.  Definitely have to make some of it next time I make mozz.  Thanks for sharing.

So, basically, mozzarella and string cheese are the same, just that string cheese has been stretched more?

Not stretched more, just that the final product is in a different shape.  "Normally" mozz is formed into balls.  For string cheese, you just leave it in elongated pieces, more or less.
