Surface Cracks - Hoop Cloth Problem, Vacuum Bag Or Wax?

I have a 4 gallon Emmenthaler That has some wicked cracks.
They are from a cheese cloth fiasco.
The rind is very dry and there is no sign of mold. It would be ready to bag but with all these cracks i am not sure it will work. Can I just leave it as is in my cave? or should I just eat it?

When you say it is ready to bag, are you referring to vac sealing it?  If it is still fairly young (less than a month), I would expect that it would expel some whey if it were vac packed.  Unless you have one that you can choose how much vacuum to apply to it.

I'm not familiar with Emmenthaler, though, so maybe I'm way off base.

Well if you leave it this way you will end up with brick from lose of moisture.
Wax or Vac is your best bet and as some said check back in a few weeks to see that it isnt sitting in whey and if so air dry and reseal.
