Is anyone aware of a source for food-grade numbers or alphabet letters that can be molded into cheese?

Ahh, that would work. I was hoping for something thicker, like 1/8" or so...

pete dixon uses old bucket material. could maybe punch it out with a stencil cutter

I've been doing hand cut HDPE and they don't come out as clean as I would like. Great if there were something industrialized in various sizes.  24pt and 30 pt if there is anyone out there with a source

sure you can find it in various thickness all the way up to 2 inchs used for gas\oil pipelines.
Look for an industrial plastic supplier which can cut you a sheet.
It sells by the wight (calculated according to density of matirial-you have different types of PE,area and thickness) and is fairly cheep and easy to work with (sharp knife,jig or punching with a hot nail)
