I am delighted to have found this forum!  I am new at cheesemaking and have lots of stupid questions..lol.  I have made 2 soft cheeses so far, two were utter failures and one was quite good.  I am determined to make a good hard cheese in the very near future.  Hello everyone!

Hi Mary Ruth and welcome to this forum. Just back from local gocery store with 4 gallons whole milk for a big Stilton/Blue Cheese Making Day :).

Don't I'm one year into cheee making and still have silly questions.

PS: I'm guessing you are in New Hampshire, USA.

Yup, John, you're correct.  NH in the United States.  Wonderful state, oceans and mountains but I would give up my perfect cheese (not yet made lol) to only be somewhere with warm temperatures and no snow right now.  I would be sooooo happy to never see another snowflake......or temperatures hovering around zero and below.  But spring is great!

Welcome, Mary Ruth!  Tom and I are new here and new to cheesemaking too, and I have to say this is an extremely friendly and helpful bunch of people.  You found the right forum!

We finished our third cheese today, a Manchego.

I'm with you on the snow thing...
We had a foot of snow/ice mix last week which caused one of the roofs to collapse at my business.
I've never been a fan of snow or cold weather but now I have an entirely new reason to hate it.
But, as Lady Liberty said, you HAVE found the best forum on the net.
Lot's of activity here and lot's of good helpful advice given by good people.
Hope you find it as informative as I have.

We had strange white fluff floating down for 1 hour 4 winters ago here in Houston :o, left a one inch layer for 1 day before disappearing, we all thought it was some by product from one of the refineries here in East Houston ::), so we all hid indoors like in summer :-[.

True Carter,
But later on this summer when you are on water rationing, my well is drying up and I'm worried about some idiot throwing a lit cigarette out of a car window we wont be so smarmy.  We desperately need a lot more water!  Hopefully the groundhog was right and last nights rain is the start of a wet Feb.
