Aging timelapse

Hi,

I decided to do a little photographic experiment while aging my Stilton-esque made from a recipe in Mary Karlin's Artisan Cheese Making at Home. You can see below a week by week evolution of the cheese in a time lapse image. They're like kids: They grow up so fast  ;)

How does it taste? Seems like it would be fairly strong.

It starts smooth but ends with a kick. I tried it on a couple of very circumspect and usually bluntly honest customers (my wife, brother in law and niece) and they all raved about it. I did think it was very good myself but sometimes fatherly love blinds you.

That is the most beautiful picture I have ever seen, honestly.  I showed this to a co worker and he said it was like a work of art.  I can honestly only hope to create something that beautiful.  Keep it up man!

Hey DannPM, thanks for the compliment. There is a quite bit of luck involved ;-) Nature made the cheese this beautiful, I only took the picture.
