Hi from NW woods - USA

Having lurked about for several weeks, I wanted say 'Hi' to everyone, and 'Thanks' for all the superb knowledge & info here - as well as all the combined efforts to make it available.
I've made a couple small cheeses (just finished batch 7) with current emphasis on Manchego - for no other reason than quick feedback (I can eat it soon after making it). I'm trying to get one cheese type basically correct before moving on to a different one. I'm plodding slowly but steadily thru this amazingly simple-but-complex process that's more fun than a James Bond movie.
I'm retired and building a house (for 10 years) in the woods of Washington (state). Just wish I'd gotten involved with the cheese making sooner so that I might include a "Cheeserie"(?) as fantastic as Mr. Wayne Harris just posted.

Welcome to the forum, Jim. You'll find there are a few of us here in the great Pacific Northwest. Linuxboy is up north. I'm a little further south.

Don't be afraid to ask questions. If you have pictures of your cheesemaking, building, cooking, whatever(?)...you'll find a place to put it here and most likely find interested souls.

I'm a bit further south now in the PNW, though I lived in the Puget Sound area for many years.
