Very nice result Boofer!  That is great eye developement.  Any bigger and they would have been oversized for the cheese.  This looks just right.  A cheese to you.

I had a wonderful sandwich with this at lunch today. Very nice. 

I wonder how much different the second make will be with its natural rind. This make was rind-free.
