So.  We have all heard - ad nauseum, most likely - my saga of searching for a slightly moister cheddar.  Enter Experiment #6,782 in Mary's Cheddar Adventures.

DERBY!!!

I made Derby #1 on 4/27/12, and Derby #2 on 5/2/12 (added garlic and herbs to #2).  Both were made using the 200 Easy Cheeses recipe.  Opened both of them on 7/15/12 - AWESOME!!!!  I was very very happy with them, very very close to what I was looking for (closer than I've ever gotten, really).  A little dry on the tail end, and a bit mild still, so I tossed them both back into the cave for another couple of months.  I think I just found my 5-6 month cheddar!  YAY!!

Sorry, I didn't take any pictures of the makes, but I did take pics when I opened them (along with my first Baby Swiss, which will be chronicled elsewhere).  Enjoy!

(PS - Forgot to mention that I messed up the pressing quite a bit - have always done stirred-curd, not actual cheddared cheddars before this, so I seriously underestimated the weight I needed to use for these.  Hence the myriad mechanical openings, but it doesn't seem to have hurt them any.)   :)

Congrats...hooyah! I love the look of your Baby Swiss. Yum!

(There is one small adjustment I would humbly request. Look at the that last pic. See how the light shows the cheese so much nicer than in the shadows? If you would be so kind...next time, go around to the other side and shoot the pics so the cheeses are in the light, not the shadows. They'll show your lovely efforts so much better.  8))

LOL Boofer - a photographer I will NEVER be!  I shall try to be more careful in the future, though, just for you.   ;)

But how could I hit someone who gives me cheeses?  You wrong me, sir!

(Now go snooping around for the rest of your morning cheese porn ... and I still have one more to go, but won't be able to post that one for a few hours, probably.)
