You could try but I bet mold would start to develop, plus it creates so much moisture that it would still drip onto your cheese. Forced air is the only way to go.

Would you explain what you mean by forced air?

It works like a refrigerator where there is a fan, usually not visible, that blows the cold around. Some freezers are just walls, very easy to identify.
