1st Cheddar

Have not posted for awhile, been waiting to report on my 1st cheese. It was a cheddar made 15 months ago.
I have made several since with variable results, but here is the report on my very first cheese.
It is wonderful!
Very sharp cheddar flavor. Very creamy, but at the same time a little too crumbly. It even melts! Was not expecting that with a cheddar.

Thanks for the cheese H-J-K. I have had better texture on my latter cheeses, but the taste of this one is the best I have had. Time to get another one going.

It's an amazing colour. Did you use annato?

Many extra-vintage cheddars give a creamy-yet-crumbly profile.This one looks like it fits the bill. AC2U.

Yes, I used Annato, and way too much. This was my first cheese and when shopping for supplies I saw a review that indicated you needed to use more Annato than the directions called for. I did. It was way too much. I think I used 2 tsp in this 2 gallen of milk cheese. I may use 1/2 tsp in my next one.
