Goat Milk Cheese Making - Aged Cheeses Recommendations

Okay, I don't speak the cheese language yet, at least in terms of defining types of cheese. I've been making Caerphilly, Lancashire, and a farmhouse cheddar. I've also made several soft cheese types.

However I may have my own goat milk soon (goat share) but the only goat cheeses I really know are feta and chevré. I prefer not to make a cheese with a short shelf life, so what can I make? Can I make Caerphilly with goat milk? Cheddar? In experience, I'm still crawling, not even taking many baby steps yet, so it needs not to be a complicated make.

Hi Darius you can make any cheese you would like only you will be your worst critic of you own cheeses, Stilton, Romano,
Pharm, try them all you will love the out come and new flavors
Stilton is one of the best made with goats milk use extra cream in it

I've made a Caerphilly and a cheddar with half goats milk and half cows milk; they were both great. Different taste, but really nice.

I make goat tomme, goat chaource, goat everything! Just experiment and see what you like.

I also did an internet search on goat forums and found several ideas there, too. Now I just need the milk!
