Beginnerish Cheese list

Hey all.
So I am looking for some easy cheeses to try, I made Feta, which turned out wonderfully, but I am now looking to try something else.
I don't have anywhere yet to age cheese (hubby is working on it, I am eager to try ^-^)
so all and any suggestion would be great, we are trying ricotta and cream cheese soon though.

I would suggest Mozzarella.  It was my first cheese and taught me a lot about everything that goes into cheesemaking.  It took many tries as I was learning to be able to get a good mozzarella that would stretch.  A great cheese to work on while waiting to make an aged cheese.

Mozzarella is quite frustrating actually. Try some of the other cheeses that do not take much time to enjoy the "fruits" of your labors: Chevre, Farmer's cheese, Ricotta, Halloumi, Paneer.

These also take almost no specialized ingredients.

Then, when you are happy with these, you can branch into those that take more time, ingredients, and equipment. Read the other postings and consult your own taste buds and decide what you want to try and make.
